Lemon and white wine baked fish

Ingredients

1 large onion- thinly sliced
salt and freshly ground black pepper
3 lemons- thinly sliced
2 cloves garlic- finely chopped
1 kg hake fillets-skin removed
30 ml olive oil
75 ml dry white wine
30 ml butter
1/4 cup fresh parsley- chopped

Method

Preheat the oven to 180°C. Sauté the onion and garlic in the olive oil until soft. Spoon into a 26 x 21 cm ovenproof dish.

Arrange the hake fillets on top of the sautéed onion and garlic and season generously with salt and freshly ground black pepper.

Arrange the lemon slices and the fresh parsley on top of the fish and pour over the white wine.

Bake for about 15 minutes or until the fish is done.

Reserve the fish sauce and remove the lemon slices. Place the fish on a serving platter.

Add the butter to the fish sauce and blend until the butter has melted. Season with salt and pepper if necessary.

Pour over the fish and serve separately with extra lemon wedges.
