Ingredients (10)

1 green beans — fine
1 snow peas — packet, mange tout
100 ml parmesan cheese — shavings
60 ml sundried tomatoes — cherry, marinated
fresh basil leaves
micro greens — to garnish
DRESSING:
1 garlic — small cloves, crushed
30 ml Dijon mustard
15 ml vinegar — cider
60 ml fresh chillies — 573

Method:

Blanch the beans and snow peas in boiling water for 2-3 minutes then refresh under cold water. Drain well.

Whisk the garlic, mustard and cider vinegar together. Add the olive oil gradually and whisk until thickened. Pour the dressing over the vegetables while they are still warm. Set aside to cool.

Toss with the Parmesan, sundried tomatoes and basil. Garnish with micro-greens. Season to taste.
