Sweet and sour pork

Ingredients (14)

SWEET AND SOUR SAUCE:
1/4 cup brown sugar
2 Tbs soy sauce
1/4 cup pineapple — juice
1/4 cup vinegar — white wine
1 Tbs cornflour — slurry
PORK:
600 g pork — fillet, cubed
3 Tbs soy sauce
1 Tbs cornflour — maizena
oil — for deep frying
BATTER:
1/4 cup flour
1/4 cup cornflour — maizena
1 pinch salt
1/4 cup water — sparkling

Method:

To make the sauce:

Place all sauce ingredients except the corn flour into a saucepan and heat gently over medium heat until the sugar has dissolved.

Bring the sauce to the boil, add the diluted corn flour mix and allow to thicken. Set aside.

To prepare the pork:

Place pork into a glass bowl and add soy sauce and corn flour. Mix well to combine and set aside.

To make the batter:

Place flour, corn flour and salt into a bowl and mix lightly.

Add ¼ cup sparkling water and mix until a smooth, thin batter is formed. You may need to add more water if the batter is too thick.

For the pork:

Heat oil until hot.
Dip the pork into the batter and deep fry until golden brown, crispy and cooked through.

Remove from the oil using a slotted spoon and drain on some kitchen paper.

Toss the crispy pork into the sweet and sour sauce and serve immediately with egg fried rice.
