Tired of tried and trusted mince recipes? Why not prepare nachos with flavoured pork mince served on tortilla chips, or baked sweet potato?
Ingredients
- tortilla chips or 4 cooked orange sweet potatoes
- 1 onion
- 15 ml crushed garlic
- 1 kg Malu pork mince
- 15 ml mixed herbs
- 240 g tomato puree
- 400 g canned diced tomatoes
- salt and pepper
- 410 g canned whole corn in brine (discard the brine)
Method
- Over medium heat, fry the onion and garlic until light brown.
- Add the Malu pork mince and fry until cooked.
- Add the mixed herbs, tomato puree, canned tomatoes, salt, pepper and corn.
- Mix through to ensure that everything is well combined.
- This mince mixture can be served with tortilla chips as nachos, or on top of a cooked sweet potato that has been cut in half, or in slices.
Add your favourite Mexican toppings (sour cream, salsa, jalapeños, grated cheese and guacamole).
