Cameroonian peanut stew

Perfect for winter because it's a rich warming dish. A lot of meat and vegetable dishes in West Africa are prepared with peanuts. The soup (which is more of a stew) can be made with chicken, beef, lamb or goat.

1. Dry the chicken with paper towel. Rub salt and ginger into each piece.

2. Heat the oil in a pot over high heat. Brown the chicken pieces in the pot and transfer to a plate.
